Rheingau wines are “white wines, which, with the sheer endless variance of their bouquet and magic balanced acidity, are incomparable in the world” says Ernst Hornickel and Professor Gerhard Troost from Geisenheim adds: "The acidity is the backbone of the Riesling wine. Acidity and age are related. No other grape variety is as long-lasting as the ripe Riesling, none that thankful for storage over two to three years".
